de Balajan' nestles among Muscat's vineyards just a few kilometres from Sète, Montpellier and Palavas Les Flots. You will be welcomed by the Deneu-Roques family and their team, who offer inventive local dishes with ingredients from the market. Specialities include: oysters from Bouzigues, fish soup, monkfish bourride (a Sète speciality) veal kidneys with violet mustard and butterfly king prawn kebabs with chilly sauce and sprinkled with mangos and coarsely grated pineapple.
