This idyllic retreat is tucked away in the beautiful Hérault countryside between Molière's Pézenas and the water's edge at Mèze. Whether it's the oysters of Bouzigues, the long white beaches of Marseillan, Bézier's bull-fighting ring, Sète's seafood restaurants and panoramic views of the Mediterranean sea, or the host of local historical and cultural sites, there are plenty of leisure pursuits to be enjoyed nearby the Domaine.

The 175-acre Domaine has probably been producing wine since Roman times, but it was Baron Hilaire Reynaud who gave it the name of his patron saint, Saint Hilaire, when he purchased it in 1817. The Baron was a local celebrity having been born in the area and risen to fame as an illustrious hero and general in Napoleon's Grande Armée. A small collection of historical artefacts relating to the Baron and his family is being collected and on show.

The buildings themselves comprise a Bastide, built in 1780 and an Art Deco wing added in 1934, both of which were renovated in 2007 and 2016 to create luxury accommodation for our guests. To the North, the beautiful wooded park based on the original 1817 design is perfect for a shady afternoon stroll, while there's always something wine-related going on in the winery buildings. Here, depending on the season, guests can watch the whole process as grapes from the surrounding vines are gathered, fermented, barrelled and finally bottled to become our top award winning IGP Pay d'Oc wines.
