Passionate about their region, Frederic chooses his ingredients from amongst local growers - turnips from Pardailhan, kids from Combebelle, goat's cheese from La Treille - while Nathalie selects the best vintages from the St Chinian appellation and Berlou hillsides, creating a fine wine list at realistic prices.
With a view to sharing their finds, cookery classes and wine tasting with a grower are available, plus a botanical stroll in order to recognise plants that Frederic gathers for his dishes. These factors, together with the beautiful, contemporary dining room and the terrace shaded by plane trees, contribute to the feeling of being in another place, another time...
